Smothered Pork Chop Scalloped Potato Casserole

In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, stirring until thickened. Remove from heat and mix in cheddar cheese, cream of mushroom soup, onion soup mix, garlic powder, and black pepper.
Assemble the casserole:

Layer half of the sliced potatoes and onions in the prepared dish. Pour half of the sauce over the potatoes. Repeat with remaining potatoes and sauce.
Prepare the pork chops:

Season the pork chops with paprika, salt, and pepper. Sear them in a skillet over medium-high heat for 2 minutes per side, then place them on top of the potato mixture.
Bake:

Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, or until the potatoes are tender and the pork chops are cooked through.
Serve:

Let rest for 5 minutes before serving. Enjoy warm with a side of vegetables or a fresh salad!
