Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
Cook the Ground Beef: In a large skillet over medium heat, warm the olive oil. Add the ground beef and cook until browned, breaking it up with a spatula. Drain excess grease.
Sauté the Onion: Add the diced onion to the skillet and cook for 2-3 minutes until softened. Stir in the garlic powder, onion powder, salt, black pepper, and thyme.
Combine the Soups & Rice: In a large mixing bowl, whisk together the French onion soup, cream of mushroom soup, and beef broth. Stir in the uncooked rice until well combined.
Assemble the Casserole: Pour the soup and rice mixture into the greased baking dish. Spread the cooked ground beef evenly over the top. Gently stir to distribute the beef throughout the casserole.
Bake Covered: Cover the dish tightly with aluminum foil and bake for 45 minutes.
Add Cheese & Crispy Onions: Remove the foil and sprinkle mozzarella and cheddar cheese evenly over the top. Add the crispy fried onions.
Final Bake: Return to the oven, uncovered, and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
Serve & Enjoy: Let the casserole sit for 5 minutes before serving. Garnish with extra crispy onions if desired. Enjoy this comforting, cheesy, and flavorful dish!
